Rolling hills, rosemary lined gardens, fireflies, magical sunsets, there’s nowhere we’d rather be in the early summer than beautiful Tuscany, Italy. So from June 14-21, that’s exactly where you’ll find us!
In 2025, we are thrilled to be bringing back our number 1 Italy fan Lauren Toyota from hot for food, for the revival of the legendary Pasta La Vista Italy! Lauren is not only an expert in vegan living, she’s also a cookbook author and has recently launched a business working as a vegan personal chef. This will be your opportunity to learn from Lauren in not one but two fabulous cooking classes, and to experience what it’s like to work with her first hand! In addition to this, you’ll also get to meet the wonderful and talented Erin Ireland who will join us for our opening night dinner! We couldn’t have dreamt of a better lineup!
As always, we’ll reside at our home away from home, Pensione Vignamaggio, and throughout the trip we’ll embark on a day of vegan wine-tastings, traverse the varied landscape of colourful Cinque Terre, visit a farm sanctuary, go on a guided tour of historical Florence and so much more!
We’ll also have the opportunity to indulge in a mouth-watering menu of veganized Italian food prepared by our very own private vegan chef, the fantastic Gabriele Palloni.
And with that we can’t wait to grab a glass of wine and watch the sunset together in 2025!

Getaway Details
Saturday, June 14th: Check-in at Pensione Vignamaggio followed by welcome drinks and opening dinner party with both Lauren Toyota and Erin Ireland!
Sunday, June 15th: Family breakfast, wine tasting experience with beautiful winery lunch overlooking the Tuscan hillside, dinner at hotel.
Monday, June 16th: Family breakfast, lunch at hotel, dinner culinary experience with Lauren Toyota from hot for food.
Tuesday, June 17th: Family breakfast, visit to Ohana farm animal sanctuary, day trip into Florence with guided tour, free time
(dinner not included on this day).
Wednesday, June 18th: Family breakfast, free time, family lunch at hotel, dinner culinary experience with Lauren Toyota from hot for food.
Thursday, June 19th: Family breakfast, Cinque Terre excursion with packed lunch, free time over dinner in Monterosso.
Friday, June 20th: Family breakfast, free time, lunch at villa, time to pack and enjoy Panzano, closing night dinner.
Saturday, June 21st: Family breakfast followed by check out and goodbyes.

AMANDA PERSI
As a PR and event management expert, Amanda has over 15 years of experience working with everyone from Lady Gaga to Kendrick Lamar, to entrepreneurial groups, to corporate teams, and everyone in between! Having planned events and getaways in North America, Europe and Asia, she is both The Getaway Co’s founder and go-to inspiration captain!
LAUREN TOYOTA
KIM BIZZARRI
Kim is a Rome-born, Tuscany-based, British-Italian who has spent 20 years consulting for some of the world’s largest environmental NGOs. Kim has dedicated his life to promoting social change, with a focus on redefining the way in which humans relate to other life forms, especially animals. Leading The Getaway Co.’s vegan tours in Italy is part of Kim’s dedication to supporting vegan companies who are contributing to changing the world.
Born and raised in Florence, Italy, Gabriele has worked as a chef in countless creative formats, has written three vegan cookbooks, and collaborates on all kinds of exciting vegan projects in Italy and beyond. Gabriele owns a vegan B&B in Florence, and works as a home chef spreading his message of antispeciesism across the nation.
Erin Ireland is the owner of Vancouver’s To Live For Bakery and Cafe, as well as, a recipe developer, content creator and animal rights advocate. A former TEDx speaker, she shares her knowledge and experiences to support other plant-based entrepreneurs globally in an effort to raise awareness about the importance of vegan eating.
