One of those amazing humans is Sara Tercero, the powerhouse behind BetterFoodGuru, where she shares bold, colorful, plant-based recipes that make eating well feel joyful and easy. We caught up with Sara to chat about her favorite travel memories, go-to vegan eats, and the quirky pet names that keep her smiling every day. What is your favourite travel memory?
My favourite travel memory? That’s really hard! I have always loved traveling, there is something so magical and freeing about visiting new places and getting outside your comfort zone. One of my coolest travel memories was visiting Jamaica and actually sleeping on a roof under the stars, up in the hills. We even had to bathe in a stream, and we ate vegan food cooked over an open fire. There was even an outhouse! So awesome.
Favorite place you’ve traveled and why?
I have been to some really wonderful places like Italy and Greece but I think I have to say Mexico is my favorite. It’s because I love Mexican food and culture so much, and I speak the language. The art is incredible, the music, the scenery. It has everything you could wish for. Mountains, Beaches, Cities, Nightlife, Countryside. And the people are so lovely and fun.
What’s your favorite meal to eat after coming home from a trip?
After a trip, the thing I want to eat most is a big fat salad. Often while traveling, it feels like there is not enough roughage for my liking. So I always make a giant, veggie filled salad.
What’s your favorite recipe of your own to make?
Vegan Kale Caesar is always my fave! Here’s my simple recipe. This one is easy to make, has fewer ingredients than most, and tastes amazing. The cashew caesar dressing is super creamy, garlicky and umami. Kale is the perfect green for this dressing, it holds up well and gets more tender as it sits. The smoky, oven baked chickpeas and homemade croutons give it a delightful crunch. I can’t say enough about this delicious recipe. Honestly, I would eat this every day happily, it is that good!
What are your top 3 vegan restaurants?
We eat at the Loving Hut a lot, which is an international vegan chain restaurant. I love how consistent the food is. You can’t go wrong with noodles, tofu and rice!
I also eat a lot of vegan sushi. Avocado rolls, cucumber rolls and Inari. My favorite Japanese restaurant is in Berkeley California, called Kirala. They’re not a vegan restaurant but they have awesome vegan options. They have these miso shiitake skewers that are to die for.
My favorite local vegan restaurant just moved to another city. They were called Not Ya Mama’s Vegan Cafe and they had the best vegan chicken sandwiches and vegan steak and cheeses!
Do you have any pets? What are their names and what are their additional nicknames you call them?
Omg Pets! Yes. We have a dog named Bibi. She is 4 years old and I call her Poop lol. Everyone hates when I say that. But it’s short for Poopy Dog. We also have 2 cats. One is an orange cat named Caramel. She is huge so we call her Fat Cat, Catty or Fatty Bumbalatty. The other cat is Lightning Bolt. She is a fluffy grey cat. I call her Princess Fluffy Butt, Meowmie, or Bunny Butt.
What’s something your followers might not know about you?
My followers may not know that I swear like a sailor. It’s the Massachusetts effect. I try to curb it but it slips out.
